So, I went to a big homeschool Halloween party and I overdid it on bringing snacks. I dunno… I kind of feel like I’d rather overdo it when it comes to providing food than underdo it, right? I mean, it’s not like it won’t get eaten eventually by someone. Wait… right? That’s right, isn’t it? Ugh…
Of course, I thought I was late. In fact, I marked it as needing to ARRIVE at 12:30pm when in fact I only left my home at 12:20pm for a 30-minute trip. I just really didn’t plan the timing of lunch and packing and getting the kids into costumes and… well… I didn’t plan any of it well. Except that all the food was already ready to go INTO the car on time. That’s a huge bonus.
ANYwhooo… so here’s what I made.
I purchased packs of mandarin oranges that had no corn syrup or dye added to it and hubby used a Sharpie or something to draw Jack-o-lantern faces on them. When I got there, another mom noted that her kids did this for another function and got creative with vampire faces and bats!
Then there were the BOO-nanas… half of a banana on a skewer dipped in orange juice, rolled in coconut and then we added mini chocolate chips for eyes and mouth but I saw it done with raisins, too. We froze them overnight and they held up okay, but the leftovers are really meant for the blender because they’re smooshy now. (“smooshy” is a word, right?)
And because I felt compelled to offer snacks that would not elevate insulin levels, I added some fresh veggies–baby carrots with black olives…
I also had a plain, ole, black, square tray of celery sticks making a border holding in a mountain of cherry tomatoes. I’d brought guacamole and garlic hummus AND a ranch dressing but another woman brought fresh broccoli bits and snap peas… and ranch. So we used her ranch dip since it was still in a container that other people could read ingredients of whereas mine would’ve had to be poured into a bowl.
Last, but by no means least–the broomsticks. A pretzel rod with (I know, nobody can believe this) Velveeta Blanco Queso cheese slices attached with a chive. And I’ll state for the record that I call “bull” on anything actually ever being held by a chive. Not buying that nonsense. This was also the most time consuming snack, but it went over pretty big!!!
The highlights of MY day were a child under 2yo trying to scare her mother with the BOO-nanas and the conversation I had this conversation on the way home:
Him: “Mama? I feel like today was the best day of my life!”
Me: “The BEST day?? Of your LIFE??”
Him: “Well, one of them–I feel like I get two Halloweens”
*dreamy sigh*
